Liberian pumpkin cake recipe

½ cup butter or margarine
1¼ cups sugar
2 eggs
2 cups sifted all-purpose flour
1 tablespoon baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
1 cup canned pumpkin
¾ cup milk
½ teaspoon baking soda
- Preheat the oven to 350 degrees F.
- Blend the softened butter with the sugar and eggs, beating well.
- Sift the flour and spices into the mixture and mix well.
- In a separate bowl, mix the pumpkin, milk and baking soda.
- Add the pumpkin mixture to the flour one and mix thoroughly
- Bake in a greased pan for about 25 minutes. .
