Liberian pumpkin cake recipe

½ cup butter or margarine

1¼ cups sugar

2 eggs

2 cups sifted all-purpose flour

1 tablespoon baking powder

½ teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon salt

1 cup canned pumpkin

¾ cup milk

½ teaspoon baking soda

 

  1. Preheat the oven to 350 degrees F.
  2. Blend the softened butter with the sugar and eggs, beating well.
  3. Sift the flour and spices into the mixture and mix well.
  4. In a separate bowl, mix the pumpkin, milk and baking soda.
  5. Add the pumpkin mixture to the flour one and mix thoroughly
  6. Bake in a greased pan for about 25 minutes. .
